Start lean with a single vessel, add fresh-ingredient cutting as recipes demand it, and bolt on homogenization only for the sauces that need to be silk-smooth. Each configuration below is a complete, scalable sauce manufacturing setup.

Configuration 1: Universal Cooker Solo

The smallest serious sauce plant: one Universal Cooker. Its interchangeable tool sets chop aromatics directly in the bowl, and can work them all the way down to fine paste, while dual heating cooks the batch, the agitator blends, and the cooling jacket brings it to fill temperature. Configuration 2: Universal Cooker + Optional Coarse Pre-Cutting

Only at high chopping volumes

For most sauce plants this add-on is unnecessary, the cooker cuts and fine-pastes in the bowl. It earns its place only when coarse-cut material is needed by the tonne: crates of onion, chili or tomato feeding several cooker batches a day. Then a Microcut fitted with its coarse cutting head (specified 0.2–25 mm) pre-chops continuously by centrifugal action, no heat, no friction, so each cooker cycle starts already loaded. For fibrous coarse work, a Disc Grinder takes the first pass instead.

Smooth & emulsified recipes

A minority of sauces, cheese and alfredo, fine peri-peri, emulsified house dressings, must be perfectly smooth. Two options cover it: attach a Nexus inline homogenizer to the Universal Cooker in a recirculation loop, or run those SKUs on a Mixpro, the Prócer vacuum processing system whose three-stage DRI homogenizer emulsifies while it mixes. Do I need a homogenizer to make sauce?

Most cooked sauces do not need homogenization, pizza, arrabbiata, schezwan and salsa are prized for visible texture. Homogenize only when the recipe demands a perfectly smooth or emulsified body, such as cheese, alfredo or fine peri-peri sauces. What Brix, pH and consistency should commercial pizza sauce meet?

The US federal purchase specification for pizza sauce, USDA CID A-A-20200A, calls for a minimum of 11.5% natural tomato soluble solids, pH between 3.80 and 4.50, and Bostwick consistency of 4.0–6.8 cm for medium fully-prepared sauce measured at 20 °C for 30 seconds. What is the hot-fill process for cooked sauces?
