Sauce Making Machine for Pizza, Pasta & Every Cooked Sauce
Great sauces are cooked, not just blended. The Prócer Universal Cooker is an industrial sauce cooking machine that chops, simmers, stirs and chills in one sanitary vessel: pizza sauce, arrabbiata, schezwan, salsa, curry bases and barbecue glazes on a single platform, batch after identical batch.
Designed & fabricated by Kinemach Engineering and Machines Pvt Ltd, Pune · Shipping worldwide · SS316L wetted parts
At a glance: An industrial sauce making machine must cut, cook, mix and cool in one controlled, hygienic cycle. The Prócer Universal Cooker performs all four in a single 5–300 L vessel using direct steam injection plus jacket heating, interchangeable cutting and mixing tools, a vacuum option and CIP. Engineered by Kinemach in Pune, India and exported worldwide, it runs pizza, pasta, schezwan, salsa, curry and barbecue sauces on one platform.

Four quality battles every sauce manufacturer fights, and how the machinery wins them
Sugar-rich sauces catch and brown on hot kettle walls. Dual heating: steam injected into the product for fast heat-up, jacket for gentle simmer, plus constant wall-to-wall agitation keeps colour bright and flavour clean.
A pizza sauce is not a purée. Interchangeable tools cut aromatics to a deliberate size instead of crushing them, so herb flecks, chili and onion stay visible, the difference buyers taste and see.
Time, temperature and agitation follow the stored recipe, not the operator's judgement. The hundredth batch matches the first: the consistency contract that retail and food-service buyers audit.
The cooling jacket takes the batch straight to filling temperature and holds it, feeding a validated hot-fill-hold step (typically 60–93 °C for acidified sauces, per UMN Extension) without an extra hold tank.
How cooked sauces are manufactured: five stages
Prep & Cutting
Weigh the recipe; the cooker's own cutting tools chop onion, garlic, chili and herbs in-bowl, down to fine paste when wanted.
Load & Mix
Charge paste or purée, oil, prepared vegetables and dry ingredients; the anchor agitator sweeps the full vessel wall.
Cook & Reduce
Steam injection races to temperature; the jacket holds a controlled simmer to target solids without catching.
Finish (± Homogenize)
Vinegar, herbs and late flavours go in; smooth-recipe batches polish through a Nexus inline homogenizer.
Cool & Hot-Fill
Jacket cooling to fill temperature, then jars, pouches or bag-in-box under a validated hot-fill-hold regime.
Three ways to configure your sauce processing line
Start lean with a single vessel, add fresh-ingredient cutting as recipes demand it, and bolt on homogenization only for the sauces that need to be silk-smooth. Each configuration below is a complete, scalable sauce manufacturing setup.
Configuration 1: Universal Cooker Solo
Hero route · Lean entryThe smallest serious sauce plant: one Universal Cooker. Its interchangeable tool sets chop aromatics directly in the bowl, and can work them all the way down to fine paste, while dual heating cooks the batch, the agitator blends, and the cooling jacket brings it to fill temperature. At this scale the cooker needs no separate cutting machine: it is a small scale sauce making machine that is also the core of a large plant.
Recipe Ingredients
Tomato paste or purée, oil, aromatics, sugar, salt, spices
Finished Sauce
To hot-fill & packing
- Lowest entry investment; one utility drop, one operator
- 5–300 L sizes, pick the batch that matches your day's orders
- Runs the whole menu: pizza, pasta, BBQ, stir-fry, curry bases
- Vacuum option protects colour and fresh-herb notes during the simmer
Configuration 2: Universal Cooker + Optional Coarse Pre-Cutting
Only at high chopping volumesFor most sauce plants this add-on is unnecessary, the cooker cuts and fine-pastes in the bowl. It earns its place only when coarse-cut material is needed by the tonne: crates of onion, chili or tomato feeding several cooker batches a day. Then a Microcut fitted with its coarse cutting head (specified 0.2–25 mm) pre-chops continuously by centrifugal action, no heat, no friction, so each cooker cycle starts already loaded. For fibrous coarse work, a Disc Grinder takes the first pass instead.
Fresh Vegetables & Herbs
Onion, garlic, chili, basil, tomatoes at multi-batch volume
Finished Sauce
To hot-fill & packing
- Add it only when chopping demand outgrows in-bowl cutting, not before
- Cold coarse chopping preserves volatile garlic and basil notes before the cook
- Continuous feed keeps every cooker cycle short on multi-batch days
- Fine work still happens in the cooker, one machine fewer to clean
Configuration 3: Add Homogenization (the Exception, Not the Rule)
Smooth & emulsified recipesA minority of sauces, cheese and alfredo, fine peri-peri, emulsified house dressings, must be perfectly smooth. Two options cover it: attach a Nexus inline homogenizer to the Universal Cooker in a recirculation loop, or run those SKUs on a Mixpro, the Prócer vacuum processing system whose three-stage DRI homogenizer emulsifies while it mixes. Keep the cooker as the workhorse; reserve homogenization for the recipes that ask for it.
Silk-Smooth Sauce
To hot-fill & packing
- Nexus range: 4,500–120,000 L/h across 24 models, scales with the plant
- Mixpro handles free-flowing liquids up to 100,000 cP pastes
- Emulsified and textured SKUs coexist in one plant without compromise
- Upgrade path, not rip-and-replace: the cooker stays central as you grow
| Decide by | 1 · Cooker Solo | 2 · + Coarse Pre-Cut | 3 · + Nexus / Mixpro |
|---|---|---|---|
| Texture goal | Rustic body to in-bowl fine paste | Same, coarse chop just arrives faster | Perfectly smooth or emulsified |
| Starting materials | Pastes, purées, fresh produce, dry goods | Fresh vegetables at multi-batch tonnage | Any, recipe decides |
| Typical products | Pizza, marinara, schezwan, BBQ, gravy bases | Salsa and chunky lines at high volume | Cheese, alfredo, fine peri-peri |
| Daily output fit | Startup → mid-scale batches | High chopping demand only | Any scale; Nexus adds continuous polish |
| Growth step | Add a coarse pre-cutter only if chopping bottlenecks | Add Nexus for smooth SKUs | Parallel cookers; larger Mixpro |
Universal Cooker vs steam-jacketed kettle line vs imported universal machines
Most sauce factories in India and export markets today run banks of steam-jacketed kettles with add-on stirrers, or evaluate premium imported universal cooking machines. Here is the physical, row-by-row difference.
| Prócer Universal Cooker | Steam-jacketed kettle + stirrer | Imported universal machine | |
|---|---|---|---|
| Heating | Steam injection into product + indirect jacket: fast and controllable | Jacket only; slow ramp, hot-wall gradients | Varies; DSI often a priced extra |
| Scorch control | Driven anchor agitation sweeps the heated wall continuously | Slow or manual stirring; burn-on at the wall is routine | Good, with driven agitation |
| Cutting in-vessel | Interchangeable cutting/emulsifying tool sets | None, pre-cut elsewhere | Yes, on comparable machines |
| Vacuum & aroma retention | Vacuum option on the same vessel | Not available | Available at premium |
| Cooling | Cooling jacket in the same bowl: cook-to-fill in one vessel | Transfer to a second vessel or wait out ambient cooling | Integrated on some models |
| Hygiene & cleaning | SS316L wetted parts, CIP-ready | Open-top manual scrubbing common | High standard, high service cost |
| Delivery & spares | 6–8 weeks from Pune; spares ~48 h; engineers in days | Short delivery, but capability gap remains | 16–24 weeks typical; spares cross borders |
| Where it wins | Multi-recipe cooked-sauce plants, 5–300 L batches | Single simple product at very high continuous volume | Buyers who must specify an EU nameplate |
Fair is fair: above roughly 2 t/h of one unchanging SKU, a dedicated continuous cooking line earns its keep. For every multi-recipe sauce plant below that, a batch cooker with real tooling is the stronger economics:

Sauce production machinery: buyers' questions answered
Which machine is used to make pizza sauce and pasta sauce commercially?
Commercial pizza sauce and pasta sauce are made in a cooking mixer: a jacketed, agitated vessel that cooks and blends in one cycle. The Prócer Universal Cooker is a sauce making machine of this class with direct steam injection plus jacket heating, interchangeable cutting and mixing tools, a cooling jacket and 5–300 L batch sizes, so cutting, cooking, mixing and cooling happen in a single sanitary vessel.
Can one machine cook, cut and mix sauce?
Yes. The Universal Cooker accepts interchangeable tool sets for mixing, cutting and emulsifying, so a single vessel can chop aromatics, even down to fine paste, cook the sauce and blend it to a uniform body. Many sauce startups begin with just this one machine plus a filling station, adding a coarse-cutting Microcut only if daily chopping volume demands it, or an inline homogenizer for smooth recipes.
What is the difference between a cooking mixer and a steam-jacketed kettle?
A steam-jacketed kettle only heats; stirring is manual or a simple stirrer, and cutting, emulsifying, vacuum work and cooling need separate equipment. A cooking mixer such as the Prócer Universal Cooker integrates dual heating, a driven anchor agitator with high-shear tooling, a cooling jacket, vacuum option and CIP: one vessel doing the work of a small kettle room. The comparison table above shows it row by row.
Do I need a homogenizer to make sauce?
Most cooked sauces do not need homogenization, pizza, arrabbiata, schezwan and salsa are prized for visible texture. Homogenize only when the recipe demands a perfectly smooth or emulsified body, such as cheese, alfredo or fine peri-peri sauces. Then a Nexus inline homogenizer added to the Universal Cooker, or a Mixpro vacuum homogenizing system, covers the requirement, see Configuration 3.
What Brix, pH and consistency should commercial pizza sauce meet?
The US federal purchase specification for pizza sauce, USDA CID A-A-20200A, calls for a minimum of 11.5% natural tomato soluble solids, pH between 3.80 and 4.50, and Bostwick consistency of 4.0–6.8 cm for medium fully-prepared sauce measured at 20 °C for 30 seconds. Recipe-based control on the Universal Cooker holds each batch to targets like these.
What is the hot-fill process for cooked sauces?
In hot-fill-hold, sauce is filled hot, typically 60–93 °C per University of Minnesota Extension guidance, held for a validated time, then cooled, which sanitises the container interior; the method suits acidified sauces with pH at or below about 4.1. The Universal Cooker's jacket brings the batch to filling temperature and holds it there without a separate hold tank.
What capacity sauce production lines can Prócer supply?
Universal Cookers run batches from 5 to 300 litres, pilot kitchen to full production shifts. For continuous polishing, Nexus inline homogenizers span 4,500 to 120,000 litres per hour across 24 models. Where a vacuum homogenizing vessel is the right fit, Mixpro systems scale from roughly 20 L pilot units to production vessels above 1,000 L.
What does a sauce making machine cost?
Sauce making machine price is driven by batch size (5–300 L), tooling (cutting, emulsifying), vacuum option, automation level and whether a Microcut or inline homogenizer joins the line. Rather than a generic figure, Kinemach prepares a techno-commercial proposal configured to your recipes and daily output: for exact pricing.
How do I start a small sauce manufacturing business in India?
Fix your product list and daily volume first, then pick the smallest machine that makes saleable product, often a single Universal Cooker sized 50–100 L. Kinemach provides the machine data your project report needs, utilities, layout, output, which supports loan and PMFME subsidy paperwork, and the sanitary SS316L build supports your FSSAI licence. Trial your recipes in Pune before committing.
Where are Prócer sauce machines built?
Every Prócer sauce making machine is designed and fabricated by Kinemach Engineering and Machines Pvt Ltd at Kurali, Tal Khed on the Pune–Nashik Highway, Pune, Maharashtra. Standard machines ship in 6–8 weeks and spares dispatch typically within 48 hours, against 16–24 week lead times typical of European imports, and the Pune technology centre hosts customer trials.
Do you supply sauce making machines across India?
Yes, Prócer installs and services sauce lines in every major Indian food-processing belt: the Pune–Nashik and wider Maharashtra belt, Gujarat's Ahmedabad–Rajkot condiment cluster, Delhi NCR's Noida ready-to-eat hub, Punjab's Ludhiana–Fazilka corridor, Indore, and the southern hubs of Bengaluru, Chennai, Coimbatore and Hyderabad. Being the manufacturer in Pune means engineers and spares reach any Indian plant within days, not weeks.
Do you export sauce making machines?
Yes, Prócer sauce lines run in the Middle East (UAE, Saudi Arabia, Oman, Qatar, Kuwait), Africa (Egypt, Kenya, Nigeria, South Africa), South and Southeast Asia (Bangladesh, Sri Lanka, Nepal, Thailand, Malaysia, Indonesia, Vietnam) and Western markets including the US, UK, Canada and Australia. Machines are built for destination voltage and frequency and commissioned with video-guided support.
Is the Prócer Universal Cooker an alternative to a Stephan universal machine?
Buyers comparing universal cooking machines often shortlist Stephan universal machines alongside the Prócer Universal Cooker. Both combine cooking, cutting and mixing in one bowl; the Prócer machine adds direct steam injection with jacket heating across 5–300 L sizes, at a fraction of the imported cost, with 6–8 week delivery and spares from Pune in about 48 hours. Stephan is a trademark of its owner; Prócer is not affiliated with it.
Can I test my sauce recipe before purchasing?
Yes, book a trial at the Prócer technology centre in Pune. Bring your tomato paste, chilies, aromatics and spice kit, cook your actual recipe on the Universal Cooker, and evaluate colour, body and flavour on the spot; overseas buyers can ship ingredients and join the trial on a live video call. The trial de-risks the specification before you order.
