Legal spec, built in

The US standard demands at least 150 °F for 30 seconds; buyers audit it. A programmed steam-injection cook with logged time-at-temperature turns compliance into a recipe step, not an operator memory.

Creaming on command

Body, slice and spread texture come from the creaming reaction: agitation speed and time at temperature. Driven, repeatable agitation develops it identically in every batch, mild or sharp, soft or firm.

Dairy-gentle heat

Casein scorches on hot walls and the batch tastes it. Steam injected into the melt heats from within while the jacket trims, fast where speed helps, gentle where dairy protein demands it.

Moisture & gloss control

Vacuum cooking de-aerates the melt for gloss and clean colour, and balances steam condensate against the moisture target: the difference between a dull, openbodied cheese and a tight, shining one.

One vessel is a complete cheese plant at this scale. Add a coarse pre-grinder only when block throughput demands it, and homogenization only where spreads and dips call for it.

Configuration 1: Universal Cooker as the Complete Cheese Plant

One Universal Cooker carries the whole process: its cutting tools grind the cheese in the bowl, dual heating melts and cooks, agitation creams, the vacuum option polishes gloss and moisture, and the batch discharges hot to filling. For blocks, tins, analogue and vegan cheese, nothing else is required between raw material and filler.

Configuration 2: Add Coarse Pre-Grinding at Block Tonnage

Only for high throughput

Most cheese units never need this stage, in-bowl grinding covers it. When cheddar or mozzarella blocks arrive by the pallet and several cooker batches run back-to-back, a Microcut fitted with a coarse head (0.2–25 mm equipment range) pre-grinds continuously so each cook starts loaded and cycles stay short.

Configuration 3: Hot Homogenization for Spreads & Dips

The exception, by design

Dairy references advise homogenizing spreads while still hot: it refines fat droplets for a finer gloss and longer-stable body. Two Prócer answers: loop the hot batch from the cooker through a Nexus inline homogenizer, or run spread, dip and cream-cheese-style recipes on a Mixpro, whose vacuum vessel and three-stage DRI homogenizer emulsify while they mix. Blocks and slices never need this stage.

Can one machine grind, melt and cook cheese?

Yes. The Universal Cooker's interchangeable tool sets grind cheese blocks in the bowl, then melt, mix and cook the batch in the same vessel, no separate grinder, melter and blender. A coarse-cutting Microcut is added only when block throughput outgrows in-bowl grinding, and most plants at this scale never need it.

What is the difference between a cheese melting kettle and a cheese cooker?

A melting kettle is a jacketed pot: it heats, and everything else, grinding, dosing, real agitation, vacuum, controlled cooling, happens elsewhere or not at all. A cheese cooker such as the Prócer Universal Cooker integrates cutting tools, steam-injection cooking, driven agitation, a vacuum option and recipe control, so the whole melt-cook cycle runs in one vessel. Why are emulsifying salts used in processed cheese?

Emulsifying salts, most commonly sodium citrate and phosphates, sequester calcium from the casein network so protein can hydrate and emulsify the free fat, converting ground cheese into a smooth, stable melt. The US standard (21 CFR 133.169) caps emulsifying agents at 3% of product weight and keeps pH no lower than 5.3; the cooker doses and disperses them uniformly through the batch.

What temperature is processed cheese cooked at?

US regulation 21 CFR 133.169 requires heating to at least 150 °F (65.5 °C) for at least 30 seconds; commercial practice cooks hotter: the University of Guelph cheese technology text describes heating under vacuum to 70 °C, then to 85 °C with a two-minute hold. Recipe-programmed steam injection on the Universal Cooker reproduces that profile batch after batch.

What does vacuum do in cheese cooking?

Cooking under vacuum pulls entrained air out of the molten cheese, which sharpens gloss, colour and slice or spread body, reduces oxidation during the cook, and lets steam-injection condensate and moisture be balanced precisely against the recipe target. The Universal Cooker's vacuum option adds this control without a second vessel.

Do cheese spreads and dips need homogenization?

Block cheese does not, but spreads and dips benefit, dairy references advise homogenizing spreads while still hot for a finer, more stable body. In a Prócer line that means recirculating the hot batch through a Nexus inline homogenizer, or running spread and dip recipes in a Mixpro vacuum homogenizing system, see Configuration 3. The cooker remains the workhorse for everything else.

Can the same machine make vegan or analogue cheese?

Yes. Analogue pizza cheese and plant-based cheeses follow the same melt-cook logic, starches, plant proteins and oils dispersed, hydrated and cooked to a set, so they run on the Universal Cooker with recipe changes, not machinery changes. One vessel can carry dairy processed cheese, analogue topping cheese and vegan SKUs with CIP between runs.
